Cereal-Coated Biscuits

I prepared these biscuits last night as I was about to leave London for a few weeks (it’s time to enjoy some family time back in Italy for Christmas!) and I had one egg and some butter left in the fridge. I thought it would have been nice to leave a little tasty present for my neighbours… And my husband really appreciated them for breakfast too!!!

SERVES: Roughly 19 biscuits

INGREDIENTS

  • 1 medium egg
  • 120 gr room temperature Lurpak lightest butter
  • 120 gr sugar
  • 210 gr plain flour
  • half a tea spoon of bicarbonate of soda
  • half a tea spoon of baking powder
  • 1 pinch of salt
  • 75 gr dried raisins
  • 50 gr pine nuts
  • zest of 1 lemon
  • 150 gr Crunchy Nut cereals
  • icing sugar for dusting before serving

COOKING UTENSILS

  • baking tray
  • cooking paper

METHOD

  1. Preheat the oven to 170°
  2. Mix the sugar and the egg and when you obtain a smooth cream add the butter and continue mixing
  3. Add to your mix the baking powder, the bicarbonate of soda and the pinch of salt and mix well
  4. Revive your dried sultanas in a cup of boiling water for a few minutes, squeeze them and add to your mix together with the flour, the pine nuts and the lemon zest
  5. Place your cereals onto a large plate. Using two dessert spoons take little amounts of your dough and roll it into your cereals
  6. Cover your baking tray with cooking paper  and place your little cereal-coated balls onto it
  7. Bake for 25 minutes or until golden brown
  8. Let them cool and serve with some icing sugar on top… Enjoy!
